Ok, I feel a little dumb, but I think the issue is resolved. I moved the 'Tasks' folder in the Outlook profile directory to the desktop, and when I reopened Outlook, it recreated the new tasks, but not the old ones. However, I noticed that in the new directory, there were only 6 or 7 folders, where in the old one there were hundreds of folders. I then closed Outlook, copy/pasted the contents of the old 'Tasks' folder to the new one, reopened Outlook, and everything is there. Hopefully this helps someone else if this happens again.
